1 cup Jasmine Rice
3 TBS vegetable oil
1 small onion chopped
1 garlic clove crushed
1 cup fresh tomatoes chopped
1 cup veggie or chicken broth or water
1 cup peas
1 cup chopped carrots
Directions:
Rinse rice until water is clear, heat oil in pan and add rice garlic and onion cook until rice is pale then add tomatoes and cook down until liquid is dry then add water or broth, peas and carrots cook on low heat until liquid is absorbed
