Goetta

Pork butt with lots of fat
2 to 3 pigs feet
Steel Cut Oats for every pound of meat you need 1/2 cup uncooked oats
1 head Fresh Garlic pealed and smashed
4 large Onions pealed and cut into quarters
1 TBS Sage
1 TBS Thyme
1 TBS rosemary
2 TBS kosher salt
1 TBS black pepper
water; for every cup of oats needed you need 2 cups of water plus 3 cups
Directions:
Preheat oven to 350 Deg
In a large pot that will fit into the oven, place pork and all ingredience and cover with the water then bake until pork falls apart. Remove meat and reserve broth. Let meat and all other ingredance cool then grind everything through a medium hole grinder and set aside.
Place oats in broth and bake until all water is absorbed about 30 minutes. Mix ground meat in with cooked oats and stir to mix well. pour out on to large cookie sheet to cool and place in refigerator over night then cut into required portions and package for the freezer.
Fry in non stick pan no oil until desired crispness and serve with eggs.
