Northern Stewed Rabbit

2 young rabbits

¼ cup chopped parsley

¼ cup vegetable oil

1 onion sliced

2 Lg cloves of garlic chopped

4 cups chicken broth

2 tsp salt

¼ tsp pepper

½ cup celery chopped

3 med carrots diced

1 green pepper chopped

1 bay leaf

¼ cup flour plus some for dusting rabbit

 

 

Directions: wash rabbit season with salt and pepper lightly and dust with flour. One large dutch oven heat the oil and brown rabbit. Remove rabbit and place flour into oil drippings, cook until brow stirring well. Add broth and stir bringing to a boil until thickened, add all other ingredients and cover. Either bake at 350 deg for one hour until meat falls off the bone or place on top of stove over medium heat until done.
