Spinach Pies (Fatayer)

  • For the Dough:

  • 3 1/4 cup all purpose flour

  • 1 1/2 teaspoon salt

  • 2 tablespoons soft butter

  • 1 1/4 cup water

  • 2 tsp yeast

  • 1 tsp white sugar

  • For the Spinach Filling:

  • 2 boxes frozen spinach

  • feta cheese

  • 1 small yellow onion, chopped

  • 3 tablespoons lemon juice

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

Preparation:

In a small bowl put water and yeast ans sugar, let set 15 minutes. In a medium bowl, combine flour and salt and butter and begin to knead dough. Once butter is worked in, add warm yeast water. Knead into an elastic dough.

Shape dough into 2 inch diameter balls. Cover and set aside.

Preheat over to 425 degrees.

Combine and toss filling ingredients.

Place 2 teaspoons of filling in the center of each ball of dough. Cover filling with dough and form into triangular shape.

Bake for 10-15 minutes on greased baking sheet, until golden brown.

Allow to cool 5 minutes and serve immediately.
